Carrot Cake with Cream Cheese Frosting



With Easter around the corner, I can't think of a better time to share my carrot cake recipe with you. This is delicious carrot cake and is very easy to make. I got it from a dear friend about 35 years ago. There are many carrot cake recipes out there with slight variations.




Carrot Cake with Cream Cheese Frosting

2 cups flour
2 cups sugar
2 tsp baking powder
2 tsp soda
2 tsp cinnamon
1 tsp salt
1 ½ cups salad oil
3 cups grated carrots
½ cups chopped nuts
4 eggs

Icing
1 lb confectioners sugar
1 pkg cream cheese, softened
¼ cup margarine
2 tsp vanilla

Add all ingredients together except the eggs.  Add eggs one at a time beating well after each. Pour into a 9 x 13 pan and bake at 350 for 45-60 minutes.

For icing: Combine ingredients and beat until blended to spreading consistency.

I baked the cake and took a picture of a piece of it and realized I have to work on food photos. I wanted to steal a picture from Betty Crocker but didn't think she would appreciate it. So here's what I got...

Baking this cake always brings back such fond memories of when Dan and I were first married and living in an apartment.  We got to know Mary because she was so friendly. She took us young folk under her wings and we would sit around her kitchen table with other apartment neighbors and gab all night long.  She would talk about her daughter, a flight attendant who lived in the apartment right across the hall from her; and her husband, Neil, always had a funny story to share. They were such wonderful people. We lost touch with them many years ago, but they will be forever in our hearts, especially when we make this carrot cake with cream cheese frosting.
